Garlic Butter Steak and Potatoes

The steak
and the garlic butter potatoes are seared and cooked to perfection and
garnished with a herb and garlic butter compound. It is the best steak I have
ever had !!
Ingredients
- 1 tablespoon olive oil
- 2 teaspoons minced garlic
- 2-4 pounds baby potatoes, diced
- 1 teaspoon dried Italian herb blend
- 1 teaspoon chopped fresh parsley
- garlic powder to taste
- 1 teaspoon chopped fresh thyme
- 2-4 petite steaks
- salt and pepper to taste
- 2-6 tablespoons salted butter, soft enough to mash with a fork one tablespoon per steak, plus two tablespoons for the potatoes
Instructions
First, preheat
the oven to 400 degrees. In a small bowl, combine the butter, garlic and dried
herbs and set aside. Generously season the steaks with salt, pepper and garlic
powder on both sides.
Then, place
the pan on medium-high heat and drizzle with oil. Sear steaks for 2-3 minutes
on each side until browned. Transfer to a plate and set aside.
Add the
potatoes to the pan, season generously with salt, pepper and garlic powder and
sauté for 3 to 5 minutes until golden. Push the potatoes on one side of the pan
and put the steaks back on the other side of the pan.
Transfer to
the oven and bake for 15 to 20 minutes until the potatoes are fork-tender and
the steak is cooked according to your preferred cooking.
Immediately
after removing from the oven, place a spoonful of garlic butter on each steak
and the rest on the potatoes and let melt on the food before stirring the
potatoes to coat with butter, then garnish with thyme and chopped parsley
before serving.
