BROCCOLI CAULIFLOWER SOUP
The broccoli
cauliflower soup is creamy, comforting and perfect for cool nights! This
healthy soup recipe is a hit with all my family!
Ingredients
- 4 cups milk
- 2 cups chopped broccoli
- 4 cups chicken broth
- 1 cup chopped carrots
- 2/3 cup butter
- 1 cup chopped celery
- 2/3 cup flour
- 4 ounces cream cheese softened
- 1/2 cup chopped onion
- 1 cup shredded cheddar cheese
- 2 cups chopped cauliflower
- Salt and pepper to taste
Instructions
First, in a
large pot, combine the broth and vegetables. Bring to a boil, then reduce the
heat. Simmer until the vegetables are tender.
Then, stir
in milk.
In a small
saucepan, melt the butter. Whisk in the flour until smooth.
Add this
mixture to the pot, stirring until well combined. Stir in cheeses and simmer
until melted and well combined, stirring.
If desired,
mix the soup lightly with an immersion blender. Season to taste with salt and
