Oreo Cheesecake Bites
This Oreo
cheesecake bite is an Oreo cheesecake and happiness in the form of a bite.
Dried in white and dark chocolate, they are heavenly!
INGREDIENTS
- 1 cup sugar
- 1 tsp. vanilla
- 4 eggs
- 1 cup sour cream (I used light)
- 1/2 pound (8 oz) chocolate candy coating (or chocolate chips)
- 36 OREO Cookies, divided
- 1/4 cup butter or margarine, divided
- 4 pkg. (8 oz. each) cream cheese, softened (I used Neufchatel cheese)
INSTRUCTIONS
First, preheat
the oven to 325 ° F.
Then, line a
13 x 9-inch baking pan with aluminum foil, ends extending to the sides. Finely
crush 24 cookies (I placed them in a Ziploc bag and crush them with my rolling
pin). Melt 1/4 cup butter; mix with the crumbs. Press on the bottom of the
prepared pan.
Beat the
softened cream cheese and sugar with an electric mixer until well blended. Add
sour cream and vanilla; mix well. Add eggs, 1 at a time, beating after each
just until well blended. Chop the remaining 12 Oreo cookies. Gently fold into
the dough; pour over the crust.
Bake for
about 45 minutes or until the center is almost set. Let cool (I put mine in the
fridge for about 2 hours). Once the cheesecake has cooled, microwave the
chocolate in a microwave-safe bowl until it is melted (follow the directions on
the package); stir until smooth. Use aluminum handles to lift the cheesecake
from the pan and cut into bite-size pieces. Place on a baking sheet covered
with waxed paper. Drizzle melted chocolate over each piece of cheesecake using a
spoon. Stick in the refrigerator until the chocolate hardens.
