Green Walnut Pistachio Muffins
These pistachio muffins taste like they came from a bakery with their perfectly rounded tops and delicious pistachio flavor.
Ingredients
- 2 eggs
- 1 cup of milk
- ¾ cup granulated sugar
- ½ cup brown sugar
- Pinch of salt
- 1 teaspoon of baking powder
- ½ cup vegetable or canola oil
- ½ cup toasted walnuts
- 1 can Pistachio Instant Pudding (3.4 ounce package)
- 1⅔ cup all-purpose flour
- 1 teaspoon of baking soda
- Green food coloring (optional)
- ½ teaspoon of vanilla extract
Instructions
First, preheat the oven to 375 degrees and spray a 12-cup muffin pan with non-stick cooking spray (if you don't use liners, but liners are much easier).
Then, in a large bowl, combine all the dry ingredients: dry pudding mixture, flour, granulated sugar, brown sugar, baking powder, baking soda and salt.
In another bowl, combine all the wet ingredients: eggs, vanilla extract, milk and oil. Do not add food coloring at this point!
Mix the wet and dry ingredients and add a few drops of food coloring until the desired green is achieved.
Fill muffin cups about ¾ full, sprinkle nuts on top and bake for 15 to 20 minutes, or until a toothpick inserted in the center comes out clean.
