ASIAN LEMON CHICKEN TENDERS
One of your most favorite Chinese chicken dishes is easy to make at home with crispy, golden pieces of chicken fillet. Have delicious Chinese lemon chicken on your table in 30 minutes.
INGREDIENTS:
- 1 cup of buttermilk
- 1 1/2 cups all-purpose flour
- 2 pounds boneless, skinless chicken breasts, cut into strips
- 1 cup of vegetable oil
- Kosher salt and freshly ground black pepper, to taste
FOR THE LEMON ICING
- Juice of 1 lemon
- 1/4 cup pineapple juice
- 2 tablespoons of apple cider vinegar
- 1/3 cup soy sauce
- 2 tablespoons of olive oil
- 1/2 teaspoon garlic powder
- 1/2 cup of honey
- 1/4 cup packed brown sugar
- 1 teaspoon of ground black pepper
DIRECTIONS:
First, to make the frosting, combine honey, soy sauce, pineapple juice, brown sugar, lemon juice, vinegar, olive oil, pepper and garlic powder in a small saucepan. medium heat. Bring to a boil; reduce heat and simmer until thickened slightly, about 10 to 12 minutes.
Then, heat vegetable oil in a large skillet over medium-high heat.
Season the chicken with S&P to taste.
Working one at a time, dredge the chicken in the flour, dip it in the buttermilk, then dip it again in the flour, pressing down to coat it.
Working in batches, add the chicken to the pan, 3 or 4 at a time, and cook until evenly browned and crisp, about 3-4 minutes per side. Transfer to a paper towel lined plate.
Serve immediately, drizzled with lemon frosting.
