COLCANNON


 COLCANNON



Colcannon's is my combat traditional Irish comfort food! Creamy mashed potatoes paired with crispy fresh cabbage, seasoned with salt and fatty white pepper.


INGREDIENT

3 pounds of potatoes sort of a redhead girl

▢4 ounces unsalted butter (1 stick)

1 lb. grated green mustard , outer leaves removed

2 tablespoons of water

▢1 cup of milk

▢ 2 tablespoons fresh parsley

▢½ teaspoon salt or consistent with taste

▢½ teaspoon white pepper or to taste


INSTRUCTIONS

1.Cook and Mash Potatoes - Cook potatoes in boiling salted water until tender with a fork. Drain the water. Mash with half hot butter.

2.Cook cabbage - during a saucepan, melt the remaining butter, add grated cabbage and add water. Cook, stirring occasionally, 5 to 7 minutes, until cabbage is soft and cooked.

3.Mix together - Add cabbage to potatoes. Add milk, parsley, salt and pepper and blend everything. Taste the seasonings and adjust if necessary. Add more milk if necessary.

4.Finish and serve - Garnish with butter knobs and serve.
