CINNAMON APPLE CAKE
The apple
and cinnamon cake is decadent and wet, with big swirls of apple and cinnamon
and a sweet icing powder that settles and folds when you cut it.
Ingredients
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 1/2 cups all purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 4 cups peeled chopped apple, (I used Fuji)
- 1 1/4 cups sugar divided (1 cup for the batter, 1/4 cup for the apples and topping)
- 1/2 cup (1 stick) salted butter, softened
- 6 ounces block style cream cheese softened (I used Neufchatel)

Instructions
First, Preheat
the oven to 350 degrees F. Spray a 9 "pan bottom with a cooking spray on
the bottom and sides.
Then, Beat 1
cup sugar, butter, vanilla and cream cheese at medium speed mixer until smooth,
about 4 minutes.
Add the
eggs, one at a time, beating well after each addition.
Mix the
flour, yeast and salt.
Add the
flour mixture to the cream mixture, beating at low speed until smooth.
Mix 1/4 cup
sugar and cinnamon. Take 2 rounded tablespoons of the mixture and combine it
evenly with the chopped apples.
Stir the
apple mixture into the dough and pour into the prepared pan.
Sprinkle the
rest of the cinnamon sugar mixture evenly over the cake batter.
Bake at 350
° F for 50 to 60 minutes, or until the cake comes off the sides of the pan and
a toothpick inserted in the center comes out with only a few damp crumbs.
Cool the
cake completely on a rack. Use a serrated knife to cut.
