HEALTHY TUNA PASTA BAKE RECIPE








This healthy tuna pasta recipe is made with a quick homemade tomato sauce and a cheesy top for an easy, comforting dinner everyone will love.

Ingredients

  • 1 garlic clove, crushed
  • 20 grape / cherry tomatoes, halved
  • 1 onion, chopped
  • 240 ml (1 cup) vegetable or chicken broth
  • 1 yellow pepper, chopped
  • 160 g / 5.6 oz penne pasta, dry
  • 1 160 g / 5.6 oz can tuna (in spring water), drained and crumbled into small pieces
  • 30g (1oz) cheddar cheese - 1 HEa
  • worcestershire sauce splash
  • spray cooking oil
  • salt and black pepper
  • 240 ml (1 cup) passata (or crushed tomatoes)
  • 25g (0.8oz) mozzarella cheese - 1/2 HEa
  • chopped fresh Italian parsley, for serving

Instructions

First, preheat the oven to 180 ° C / 350 ° F (gas 4)

Then, spray a skillet over medium-high heat with cooking oil spray

Add onion and garlic and sauté until softened.

Add the tomatoes and yellow pepper and continue to fry for a few minutes.

Add the passata, broth, Worcestershire sauce and chopped fresh parsley.

Bring to a boil, then reduce the heat and let it boil slightly until it reduces and thickens (about 10 min).

While the sauce is reducing, cook the pasta according to package directions, until al dente. drain then add to the sauce with the tuna.

Sprinkle with cheddar and mozzarella and season with a little salt and black pepper.

Place in the oven and bake for about 30 minutes until the cheese on top is melted and lightly browned. Happy Cooking Time.
