BEEF STEW WITH NOODLES


Bo Kho may be a spicy and flavorful Vietnamese stew that creates an excellent bowl of noodle soup. Bho Kho may be a nice change from the standard bowl of pho noodles

INGREDIENT
FOR MEAT:
▢ 2 to 2 and a half pounds of beef brisket without bones or backs
(cut into 1 ½ inch chunks)
▢2 garlic cloves (minced)
▢3 tablespoons ginger (minced)
▢5 tablespoons of fish sauce
▢2½ teaspoon of lima powder
▢1½ teaspoon sugar
FOR Remaining Stew:
▢3 tablespoons of oil
▢1 lemongrass (cut into 3 inches long, after removing the hard wood)
▢2 lemongrass (chopped, after removing the hard a part of the wood)
▢8 garlic cloves (minced)
▢1 onion (thinly sliced)
▢4 tablespoons of ingredient
▢8 glasses of water
▢2 glasses of pure coconut milk / juice
▢2 star anise
▢1 teaspoon ground black pepper
▢1 teaspoon flavorer
▢1 teaspoon annatto powder (optional)
▢1 tablespoon paprika
8 large carrots (peeled and dig 1 ½ inch chunks)
▢1 teaspoon salt
▢3 tablespoons soy
▢3 tablespoons chili oil (or to taste)
Large vermicelli or egg vermicelli
▢¼ cup of coarsely chopped fresh cilantro
▢1 / 2 cup Thai basil
▢ 1/2 cup thinly sliced raw onions
▢ lime wedge

INSTRUCTIONS
1.First of all soak the meat . Stir beef with garlic, ginger, fish sauce, five spices powder and sugar until each part is evenly coated. Let it steep for half-hour .
2.Then heat 3 tablespoons of oil during a large saucepan or casserole dish over high heat. Add lemongrass stalks and let the oil infuse for 1 minute. Then add chopped lemon grass and garlic. Cook for two minutes.
3.Add the onions and cook until they're translucent. Then add all the meat within the pan and brown evenly on all sides. Add ingredient .
4.Stir and cook uncovered for five minutes. Add water, coconut milk , star anise, ground black pepper, flavorer , annatto and paprika. Bring the mixture to a boil, reduce heat to medium-low and simmer for 1 hour.
5.After an hour, add carrots, salt, soy and chili oil. Boil another 40 minutes.
For serving, remove any large lemongrass stalks and star anise that you simply can catch. Cook your noodles consistent with package directions, transfer them to a bowl and pour the soup over them.
6.Garnish with cilantro, Thai basil and raw onions, and serve with a couple of lime wedges on the side.
