Avocado Corn Salad
This fusion of avocado salad and corn salad is made with a simple combination of ingredients and it's so tasty.
Ingredients
- 1/8 teaspoon black pepper
- 2 avocados, peeled, pitted and sliced
- 2 tablespoons of extra virgin olive oil
- 1/2 red onion (medium), thinly sliced
- 2 garlic cloves, pressed or finely sliced
- 1/4 cup chopped cilantro (1/2 small bunch)
- 1 teaspoon of sea salt or 3/4 teaspoon of table salt
- 1 lb cherry tomatoes, halved or quartered
- 3 cooked corn cobs, peeled and cut on the cob
- 2 to 3 tablespoons lime juice from 1 to 2 limes
Instructions
First, in a large salad bowl, combine the sliced tomatoes, corn kernels, sliced avocado, thinly sliced red onion, 1/4 cup chopped cilantro and squeeze 2 garlic cloves.
Then, dfrizzle the top with 2 tablespoons extra virgin olive oil, 2-3 tablespoons lime juice (adding to taste). Add 1 teaspoon of sea salt and 1/8 teaspoon of black pepper, or season to taste. Gently stir the salad until well combined and serve. Happy Cooking Time.
