Crispy Baked Scallops
I made this dish for the first time with friends and had never heard of a scallop before. In fact, I confused a scallop with a green onion, thinking it was a dish centered on the green onion.
Ingredients
- 1/4 teaspoon paprika
- 2 tablespoons extra-virgin olive oil
- 1/8 teaspoon cayenne pepper
- 1/2 teaspoon kosher salt
- 2 tablespoons parsley , chopped
- 1/2 cup panko bread crumbs
- 16 large sea scallops , (1 - 1 1/2 pounds)
- 1/4 teaspoon coarse ground black pepper
- 4 tablespoons Parmesan cheese , grated
- 4 tablespoons unsalted butter , melted
Ingredients
First, preheat the oven to 400 degrees.
Then, dry the scallops well with a paper towel and remove any side muscle attached to the scallop by pinching and detaching it from the scallop (the muscle is much more difficult to eat than the scallop).
Combine salt, pepper, paprika, cayenne pepper, panko, parmesan, parsley, olive oil and butter in a bowl, stirring well until well combined.
Place the scallops in an 8x10 baking dish, then cover with the breadcrumb mixture.
Bake for 15 to 18 minutes or until the garnish is golden.
