Greek Shrimp with Tomatoes and Feta







A perfectly easy and satisfying shrimp dish that has such a delicious combination of Mediterranean flavors. Easy enough for dinner on weekdays but tasty enough to serve guests on weekends.

INGREDIENTS

  • 1/2 teaspoon sugar
  • 2 garlic cloves, minced
  • 1/2 teaspoon dried oregano
  • 1 tablespoon heavy cream
  • 1 medium yellow onion, diced
  • 1/2 teaspoon red pepper flakes
  • 1 tablespoon Tuttorosso tomato paste
  • salt and pepper to taste
  • 1 !14.5-ounce) can Tuttorosso Diced Tomatoes
  • 1 (4-ounce) container crumbled feta cheese
  • 1 1/4 pounds medium fresh shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 tablespoons chopped kalamata olives

INSTRUCTIONS

First, heat the olive oil in a medium saucepan. Add the onion and cook until tender, about 5 minutes.

Then, add the garlic and red pepper flakes and cook for 1 minute more.

Add the diced tomatoes, tomato paste, sugar, oregano and heavy cream. Simmer for about 3 minutes.

Add the shrimp and salt and pepper to taste. Cook until the shrimp are pink, about 2 to 3 minutes.

Sprinkle with olives and feta cheese on top and serve.
