COCONUT RASPBERRY BARS
These are the kinds of bars that you can happily serve for dessert, have a picnic, or just enjoy with a
cup of tea or coffee. I love this kind of versatility!
Ingredients
Crust
- 1/2 cup salted butter
- 1 1/4 cups all-purpose flour
- 1/4 cup white granulated sugar
Filling
- 1 cup raspberry jam of your choice
Topping
- 1 tsp vanilla
- 1/4 tsp baking powder
- 2 large eggs
- 2 cups sweetened shredded coconut
- 3 tbsp all purpose flour
Instructions
First, preheat the oven to 350 degrees F. Grease an 8x8 or 9x9 pan and set aside.
Then, mix the flour and sugar, then cut the butter with a pastry cutter until the crust mixture looks like crumbs. Tap the crust evenly on the bottom of the baking dish.
Bake the crust in the oven for 10 to 12 minutes until lightly browned. Remove and reserve.
Spread the jam evenly over the top of the crust.
Mix the ingredients for the filling until there are no more lumps and spread evenly over the top.
Return to the oven. Bake 25 to 35 minutes or until the filling is firm and set.
Remove and cool completely.
Let cool, then slice and serve! These freeze exceptionally well.
