Couscous Cheddar Cakes








Today is the third week of the cooking challenge and so far I have managed to cook my meal everyday. To make everyday cooking easier, I have to be creative and prepare a different meal with the leftovers.

Ingredients

  • 1/4 teaspoon salt
  • 2 whole eggs lightly beaten
  • 1 Tablespoon olive oil
  • 1/4 teaspoon pepper
  • 1 cup cooked couscous cooled
  • 1 Tablespoon fresh chives chopped
  • 1/2 cup cheddar cheese shredded

Instructions

First, in a bowl, combine the couscous, salt, pepper, chives and eggs.

Then, stir in the cheddar.

Form the couscous mixture into patties.

Heat the olive oil in a large sauté pan. Place half of the couscous patties in a hot pan.

Cook 3-4 minutes on each side or until golden.

Remove from heat and repeat with the remaining patties.
