Easy Ricotta Doughnuts
These ricotta donuts are soft and tender and require no rise time! This is an easy donut recipe to make at home.
Ingredients
- 2 eggs
- 1/4 tsp salt
- 1 tsp vanilla
- 1 1/2 cups flour
- Oil for frying
- 1 tsp baking soda
- 10 oz whole milk ricotta cheese
- 3 Tbsp white granulated sugar
- Powder sugar for topping
Instructions
First, preheat about 5 cups of oil in a medium saucepan over medium to medium high heat. Heat the oil to around 315 degrees. (350 will cook the donuts too quickly outside and leave them raw inside.)
Then, prepare a grill and cover it with a paper towel or two.
In a large mixing bowl, whisk in the ricotta, vanilla, sugar and eggs until all are incorporated.
Add the baking soda and salt. Mix with a rubber spatula until everything is completely mixed.
Place a piece of parchment paper and lightly grease it.
Also grease your hands with a little cooking spray. Remove from the dough and make balls about 1 inch. Place them on parchment paper while waiting to be fried.
Fry the donut balls in batches of about 6 (as appropriate) over 5-7 minutes, until they are a deep golden brown.
Take out the cooked donut balls and place them on a paper towel. After cooling for a few minutes, sprinkle with powdered sugar.
