Thai Glass Noodle Salad







Thai Glass Noodle Salad







It is a spicy Thai salad made from glass noodles with chicken and shrimp. Ideal in the summer as a starter or with other buffet dishes.

Ingredients
  • 1 tsp oil
  • 2 limes
  • 2 tsp sesame oil
  • 150 g dried glass noodles
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 250 g minced Chicken shrimp or chopped firm tofu
  • 1,5 cm fresh ginger root, grated
  • 1 carrot, thinly sliced or julienned
  • 4 spring onions, sliced
  • 1 tbsp fish sauce or more soy sauce
  • 1/2 bunch cilantro, chopped
  • 1 clove garlic, peeled and minced
  • 1 small red Thai Chili, minced
  • 40 g roasted peanuts

Instructions

First, put the glass noodles in a bowl and cover with boiling water. Let them sit for about 10 minutes.

Then, meanwhile, bring a saucepan to the boil with 1 l of water and heat a medium saucepan with 1 teaspoon of oil. Add the ground chicken and fry for about 5 minutes, breaking the pieces with a fork while cooking. Add a pinch of salt and fry for another 3 minutes, then add the garlic and fry for another minute until the garlic loses its raw smell. Put aside.

Take the noodles from the soaked water and add them to the pot of boiling water. Let them sit in the water for a minute, then drain and rinse with cold water. Cut them into small pieces with your kitchen scissors.

Put the limes in a small bowl and add the soy sauce, fish sauce, sesame oil, ginger and brown sugar. Stir until the sugar dissolves. If not, put it in the microwave for a few seconds and stir again.

Set peanuts and cilantro aside for decoration. Combine all ingredients, including salad dressing in a bowl and mix well. You want the dressing to properly cover the noodles. Sprinkle with peanuts and cilantro and serve. Happy Cooking Time.
