DEVILED EGG SALAD
The devilish
eggs in themselves are excellent, but turning them into a salad brings together
the flavors of paprika, hot sauce, onions and salt and pepper for a versatile
and transportable late summer dish.
Ingredients
- 1 tbsp sugar
- 1/4 cup minced celery
- 1/2 tsp garlic powder
- 3 tbsp dill, or sweet, relish
- 1 tbsp yellow mustard
- 1/3 cup mayonnaise
- 1 tsp Worcestershire sauce
- smoked paprika, for topping
- 1/4 cup finely chopped, white onion
- 12 peeled hard-boiled eggs, cooled compltely
- salt and pepper, to taste
Instructions
First, add
the eggs to a large mixing bowl. Use a potato masher to "break" them
into small pieces.
Then, in
another bowl, use a spatula to mix the onion, celery, relish, Worcestershire
sauce, sugar, mustard, garlic powder, salt and pepper until well blended.
Transfer the
mixture to the bowl with the crushed eggs. Use a spatula to stir, until the
mixture is homogeneous and homogeneous. Stir in mayonnaise, adding more or less
to texture / taste, until the mixture reaches your desired smoothness.
Serve this
salad on sandwiches, with crackers or even in lettuce wraps.
Sprinkle with
smoked paprika before serving.
