- 4 pounds potatoes, peeled
- 1 onion, finely diced
- Salt and pepper
- 1/2 cup milk
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon pepper
- 1.5 pounds ground beef
- 8 ounces cheddar cheese, shredded (about 2 cups)
- 1 10.75-oz can condensed Cheddar Cheese soup
INSTRUCTIONS:
First, spray
a 13x9 baking dish with cooking spray and preheat the oven to 350 degrees.
Then, add
the ground beef and onion to a large skillet, season with salt and pepper and
cook until the ground beef is cooked through and crumbled. Drain the fat and
set aside.
Cut the
potatoes into thin slices (less than 1/4 inch). Add a layer of potato slices to
the bottom of the baking dish. Sprinkle the potatoes with salt and pepper. Top
the potatoes with 1/4 of the beef mixture. Garnish the beef with 1/4 grated
cheese. Repeat this process three more times.
Mix the
condensed cheddar soup, evaporated milk, milk, salt, garlic powder and pepper,
then whisk until smooth. Pour the mixture over the potato / beef / cheese
layers. Cover the dish with aluminum foil and bake at 350 degrees for an hour.
Remove the aluminum foil, then continue cooking for another 15 minutes or until
the potatoes are tender and the dish is light golden brown and bubbling.
