STUFFED PEPPER CASSEROLE
The easy
stuffed pepper pan takes classic ingredients like rice, minced meat, tomato and
cheese and turns them into a healthy dish!
Ingredients
- 1 tsp oregano
- 1 green pepper diced
- 1 red pepper diced
- Salt & pepper
- 2 cups beef broth
- 1 8 oz can tomato sauce
- 1 medium onion diced
- 3 cloves garlic minced
- 1 cup long grain white rice
- 1 Tbs balsamic vinegar
- 1-2 cups Colby Monterey Jack cheese
- 1 lb ground beef
- 1 15 oz can diced tomatoes (petite for regular)
Instructions
First, in a
high skillet, add your ground beef, peppers, onion, oregano, salt and pepper
and cook until the beef is no longer pink and the vegetables are tender.
Then, add
the garlic and cook until it is aromatic, about 1 minute.
Add the beef
broth, tomatoes, tomato sauce and balsamic vinegar, stir to combine and bring
to a boil.
Add your
rice and stir to combine, cover and simmer for 20-25 minutes until the rice is
tender and the juices are mostly absorbed.
Remove from
heat and stir in 1 cup of cheese.
Garnish with
the rest of the cheese and replace the lid to melt.
Serve with
chopped parsley if desired.
