EASY CRANBERRY CHICKEN
Super simple
four ingredient chicken recipe!
Ingredients
- 1/4 teaspoon red pepper flakes
- 1.25 ounce (1 packet) dry onion soup mix
- salt and pepper
- 2 1/2 pounds boneless, skinless chicken thighs , excess fat removed
- 8 ounce bottle Catalina salad dressing
- 15 ounce can whole-berry cranberry sauce (or homemade cranberry sauce)
- mashed potatoes or cooked rice , for serving
Instructions
First, preheat
oven to 350 degrees F. Coat a 9 x 13-inch glass baking dish with non-stick
cooking spray.
Then, in a
medium bowl, combine the Catalina vinaigrette, onion soup mixture, cranberry
sauce and red pepper flakes. Mix well. Pour into the baking dish.
Season the
chicken thighs on both sides with salt and pepper and place them in the baking
dish in a single layer, making sure all the chicken is covered with the sauce.
Bake,
uncovered, for 1 hour (or until chicken has an internal temperature of 165 ° F)
Serve over
mashed potatoes, sweet potatoes or rice.
