Chocolate Oatmeal Bars
The oatmeal
chocolate chip cookie bars are thick and fluffy and a treat for a crowd,
potlucks and parties. They have the flavor you love of a great chocolate chip
cookie, baked in easy and delicious bars!
Ingredients
For Crust
and Topping:
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 1/3 cups light brown sugar
- 1 1/3 cups oatmeal
- 10 1/2 tablespoons unsalted butter- melted
For Filling:
- 1/4 teaspoon salt
- 4 tablespoons butter
- 3 large eggs
- 1/2 cup light brown sugar
- 1/2 cup all-purpose flour
- 2 cups semisweet chocolate chips
Instructions
First, preheat
the oven to 325 degrees and line an 8 x 8 inch pan with aluminum foil and spray
the foil with cooking spray (overhang the edges of the foil to lift the bars
from the pan more easily) .
Then, combine
flour, oats, 11/3 cups brown sugar, baking powder and salt in a medium bowl,
add 101/2 tablespoons of melted butter and stir to combine.
Firmly
squeeze half of the mixture into the pan and cook for about 8 minutes, cool.
To make the
garnish, melt the butter and chocolate chips together and stir until it is
smooth.
Whisk
together the flour, sugar and salt in a bowl.
Whisk the
eggs in the cooled chocolate mixture, then add the flour mixture.
Pour the
chocolate filling over the cooled crust and garnish with the rest of the
oatmeal mixture.
Cook 35 to
40 minutes.
Let cool
completely before serving
