STUFFED MASHED POTATO BALLS






Stuffed potato dumplings - these stuffed balls are crispy on the outside, soft and cheesy on the inside. A real treat. And you don't have to be a cooking expert, as this recipe is easy to make.

Ingredients
  • 2 eggs beaten
  • 1 cup shredded mozzarella cheddar cheese
  • 1/2 cup flour
  • 2 slices turkey bacon diced
  • 1 24 oz package of Simply Potatoes® Mashed Potatoes Any variety, I used Sour-cream and chive
  • 1 cup Panko or italian bread crumbs
  • 1 Block of Cheddar Cheese - Cut into small cubes
  • Oil for frying

Instructions

First, heat a large skillet over medium-high heat. Add the bacon and cook until brown and crisp, about 5 minutes. Put aside.

Then, heat the vegetable oil in a large pot or Dutch oven over medium-high heat while you form the balls.

Simply open the mashed potatoes and drain the liquid that has settled. In a large bowl, combine the mashed potatoes, grated cheese and cooked bacon. 
With lightly floured hands - take a scoop of spoonful of potato mixture and flatten it into a small pancake. Place the Cheddar cube in the center and wrap the potato mixture around the cheese. Repeat for the remaining balls.

Place the flour, breadcrumbs and remaining egg in three separate bowls. 
Coat the potato ball with flour, then eggs, then breadcrumbs.

Fry the potatoes in batches until crisp and golden on all sides, about 8-10 minutes. Transfer the fried potato dumplings to paper towels to drain the excess oil. Serve alone or with marinara sauce.
