Best Ever Mini Cheesecakes







Mini cheesecakes super easy. Stacked with a graham cracker crust and a creamy and tangy cheesecake. Garnish with saltedcaramel sauce, chocolate or strawberry sauce!

Ingredients

for the crust:
  • 2 tbsp sugar
  • 3 tbsp butter melted
  • 1 cup graham cracker crumbs

for the cheesecakes:
  • 2 eggs
  • 1/2 tsp vanilla extract
  • 1/2 cup sugar
  • 16 oz cream cheese softened to room temperature
  • 21 oz cherry pie filling

Instructions

First, place the paper cupcake molds in muffin tins. In a small bowl, combine the ingredients for the crust. Spread the mixture evenly among the 12 muffin cups, about 1 tbsp in each. Using the bottom of a spice jar, firmly press the crust mixture into the bottom of each muffin pan. Put aside.

Then, in a large bowl, beat together the softened cream cheese, sugar, eggs and vanilla until smooth. Pour the mixture evenly over the crusts.

Bake at 350 degrees for 15 to 17 minutes or until just put in the oven, do not overcook. Let the cheesecakes cool. Serve garnished with cherry pie filling. Happy Cooking Time.
