Slow Cooker Veggie Lasagna







Who says lasagna has to take a lot of time and effort? Not this slow cooker vegetarian lasagna! Packed with nutritious veggies and a super simple and delicious homemade pasta sauce, this lasagna will soon be your favorite. With the help of your slow cooker, this easy recipe is perfect for your family's next meal!

INGREDIENTS
  • 1 egg
  • 1 tablespoon olive oil
  • 2 cups fresh spinach
  • 1/2 chopped onion
  • 2 cups tomato sauce
  • 2 tablespoons minced garlic
  • 1 cup low fat ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • 3 cups chopped veggies of your choice
  • 12 uncooked oven-ready whole grain lasagna noodles

INSTRUCTIONS

First. chop the vegetables. Sauté onion and garlic in oil over medium-high heat. Add the vegetables and sauté until tender. Put aside.

Then, add the egg to the ricotta cheese and add the fresh spinach.

Pour a little sauce into the bottom of a greased 9 × 13 pan. Garnish with 4 lasagna noodles, 1/2 cup ricotta mixture, 1/2 vegetable and 3/4 cup sauce. 
Repeat; top the pan with noodles, remaining sauce and mozzarella cheese.

Cover and bake for 40 minutes at 375 degrees. Remove the aluminum foil and cook for 10 minutes more or until the cheese is bubbling. Happy Cooking Time.
