Thai Basil Chicken
Thai Basil
Chicken-Make this dish at home in less than 20 minutes. It's incredibly tasty,
healthier and lighter than the take-out version and guaranteed family success.
INGREDIENTS:
- 1 tablespoon fish sauce
- 3 cloves garlic, minced
- 2 shallots, thinly sliced
- 1/2 cup chicken stock
- 2 tablespoons vegetable oil
- 1 1/2 tablespoons light brown sugar
- 1 1/4 pounds ground chicken breast
- 1 1/2 tablespoons unseasoned rice vinegar
- 1 1/2 cups packed fresh basil leaves
- 1 red Thai chili pepper, thinly sliced
- 1 cup jasmine rice
- 3 tablespoons reduced sodium soy sauce
DIRECTIONS:
First, Cook
the rice according to the instructions on the package; put aside.
Then, In a
small bowl, combine chicken broth, soy sauce, fish sauce, brown sugar and
vinegar; put aside.
Heat the
vegetable oil in a large skillet over medium heat. Add garlic, shallots and
chilli. Cook, stirring frequently, until fragrant, about 1-2 minutes.
Add the
chopped chicken and cook until golden, about 3 to 5 minutes, making sure to
crumble the chicken well while cooking; drain the excess fat.
Stir in
broth and cook, stirring constantly, until sauce thickens, about 2-3 minutes.
Stir in basil until just faded, about 30 seconds.
Divide the
rice into bowls. Garnish with the chicken mixture.
