SPAGHETTI SALAD RECIPE







SPAGHETTI SALAD RECIPE








The perfect side dish for a party, potluck or barbecue, as it feeds the crowd! It's also full of flavor and simple to put together, making it an instant favorite!

INGREDIENTS
For the salad
  • 2/3 cup sliced black olives
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1 cup cherry tomatoes halved
  • 1/3 cup finely diced red onion
  • 1/4 cup grated parmesan cheese
  • 1 pound spaghetti noodles broken in half
  • 1 cup quartered and sliced cucumber
  • 1/4 cup finely chopped parsley
  • salt and pepper to taste
  • 1 1/4 cups homemade or store bought Italian dressing dressing recipe follows

For the dressing
  • 1 teaspoon sugar
  • 3/4 teaspoon dried oregano
  • 1 tablespoon dried parsley
  • 1 teaspoon salt
  • 3/4 teaspoon dried basil
  • 1/2 teaspoon black pepper
  • 3 tablespoons grated parmesan cheese
  • 1 1/2 tablespoons finely minced red bell pepper
  • 1/2 teaspoon garlic powder
  • 3/4 cup extra virgin olive oil
  • 1/4 cup white wine or red wine vinegar
  • 1 1/2 teaspoons minced dried onion or 1 teaspoon fresh minced onion

INSTRUCTIONS

For the vinaigrette:

Mix all the ingredients in a jar and shake vigorously to combine. Keep in the refrigerator until you use it.

For the salad:

First, Cook the spaghetti in salted water according to the instructions on the package. Drain and rinse with cold water.

Then, Place the spaghetti in a large bowl and add the cucumber, red and green peppers, cherry tomatoes, red onion and olives. Pour vinaigrette over pasta and vegetables and stir to coat. Salt and pepper to taste if desired. 
Sprinkle parmesan and parsley on top right before serving. The salad can be prepared up to 4 hours in advance. Happy Cooking Time.
