Slow cooker Jamaican Beef Stew

Beef Stew Recipe - This delicious one-course meal consists of succulent pieces
of meat seasoned and simmered with an abundance of herbs and spices
Ingredients
- ¼ cup canola oil
- 1 medium onion diced
- 2 bay leaves
- 2 teaspoons minced ginger
- 1 teaspoon all spice
- 1 small bell pepper
- 2 Tablespoons tomato paste
- 2 pounds stew beef cut in small chunks
- 1 Tablespoon minced garlic
- 1 teaspoon smoked paprika
- 2 cups broth/water or more
- 2-3 Green Onions diced
- 2-3 Large carrots cut in large chunks
- 2-3 pounds potatoes cut in large chunks
- 1 Tablespoon fresh thyme
- Scotch bonnet pepper or 1 teaspoon hot sauce
- Salt and pepper to taste
- 2-3 Tablespoons parsley optional
- 1 Teaspoon Bouillon powder Beef Chicken or vegetable adjust to taste (optional)
Instructions
First, Season
beef stew with salt and pepper to cover all sides
Then, Heat
oil in a skillet over medium heat. Add the beef stew and brown, turning once,
about 2-3 minutes per side, until the beef has browned. Do not overload the
pan. Cook in several times, if necessary. Add the beef to the slow cooker.
Add onions,
green onions, garlic, thyme, all spices, pepper and bay leaf; bell pepper or
hot sauce in the pan. Stir for about 2-3 minutes until the onions are
translucent.
Add the
tomato paste, the broth. Stir for one minute, then add water or broth in
skillet, scrape all sides. Bring to a boil, remove and pour into the slow
cooker.
Then add the
carrots, the potatoes in the slow cooker and salt them to your choice.
Cover and
cook at high temperature for about 3-4 hours or at low temperature for 6-7
hours.
