CHICKEN BROCCOLI PASTA SALAD
Chicken
broccoli pasta salad offers endless possibilities for new combinations of
flavors and new ingredients. This dish makes a fabulous lunch or dinner.
Ingredients
- 1/2 cup golden raisins
- 3/4 cup sliced almonds
- 3 cups small broccoli florets
- 4 scallions, diced
- 1/2 cup diced celery
- 1 pound (4 cups) dried Radiatore pasta
- 1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)
For The
Dressing
- 2 tablespoons honey
- 3 teaspoons Dijon mustard
- 1/2 teaspoon pepper
- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried Italian seasoning
- 1 cup mayonnaise
- 3/4 cup sour cream (or plain Greek yogurt)
Instructions
First, Bring
a large pot of water to a boil; cook pasta until al dente according to package
directions. Drain and rinse with cold water. Sprinkle with a little olive oil
to avoid sticking.
Then, In a
very large bowl, whisk together all the ingredients in the dressing until
smooth and smooth. Add cooked pasta, chicken, broccoli, raisins, celery,
almonds and green onions; mix and coat.
Sip
immediately or refrigerate until ready to serve.
