CHICKEN BROCCOLI PASTA SALAD







Chicken broccoli pasta salad offers endless possibilities for new combinations of flavors and new ingredients. This dish makes a fabulous lunch or dinner.

Ingredients
  • 1/2 cup golden raisins
  • 3/4 cup sliced almonds
  • 3 cups small broccoli florets
  • 4 scallions, diced
  • 1/2 cup diced celery
  • 1 pound (4 cups) dried Radiatore pasta
  • 1 pound cooked seasoned chicken breast, diced into small cubes (about 2 cups)

For The Dressing
  • 2 tablespoons honey
  • 3 teaspoons Dijon mustard
  • 1/2 teaspoon pepper
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried Italian seasoning
  • 1 cup mayonnaise
  • 3/4 cup sour cream (or plain Greek yogurt)

Instructions

First, Bring a large pot of water to a boil; cook pasta until al dente according to package directions. Drain and rinse with cold water. Sprinkle with a little olive oil to avoid sticking.

Then, In a very large bowl, whisk together all the ingredients in the dressing until smooth and smooth. Add cooked pasta, chicken, broccoli, raisins, celery, almonds and green onions; mix and coat.
Sip immediately or refrigerate until ready to serve.
