CHEESY BREAKFAST CASSEROLE
Cheesy
casserole with hash browns, sausages or bacon and mozzarella cheese! perfect
with a quick and easy hollandaise sauce.
INGREDIENTS:
- 1/4 cup milk
- 4 large eggs
- 2 small russet potatoes, diced
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 Italian sausage links, casing removed
- 2 tablespoons chopped fresh parsley leaves
- 1 cup shredded sharp cheddar cheese, divided
- 1 teaspoon hot sauce, optional
- Kosher salt and freshly ground black pepper, to taste
DIRECTIONS:
First, Preheat
the oven to 350 degrees F. Lightly coat a 9 inch baking dish with nonstick
spray.
Then, Place
the potatoes and 1/4 cup of water in a microwaveable bowl. Cover and microwave
for 4-5 minutes or until tender; Drain well and set aside.
In a large
measuring glass or another bowl, whisk together the eggs, milk and hot sauce;
Season with salt and pepper to taste; put aside.
Heat the olive
oil in a large skillet over medium-high heat. Add Italian sausages and cook
until browned, about 3-5 minutes, being crumbled during cooking; drain the
excess fat. Stir in sweet peppers and potatoes until tender, about 3-4 minutes.
Remove from
fire. Stir in 1/2 cup cheddar cheese until well blended.
Place the
sausage mixture evenly in the baking dish. Pour the egg mixture evenly over the
top and sprinkle with 1/2 cup of remaining cheese. *
Put in the
oven and bake for 35 to 40 minutes or until the eggs are firm.
Serve
immediately, garnished with parsley, if desired.
