FIRECRACKER CHICKEN MEATBALLS
This is my
favorite way to eat chicken balls. They are spiced with a sweet, salty and
spicy firecracker sauce. They are tender, full of flavor and require a minimum
of work!
Ingredients
CHICKEN
MEATBALLS
- 2 large eggs
- 1 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 2 cloves minced garlic
- 2 pounds ground chicken
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- 1 teaspoon pepper
- 1 cup plain breadcrumbs
FIRECRACKER
SAUCE:
- 1/4 teaspoon salt
- 1 cup dark brown sugar
- 1-2 tablespoons Worcestershire
- 1/4-1/2 teaspoon red pepper flakes
- 1/2 cup hot sauce
- 2 tablespoons apple cider vinegar
Instructions
First, Preheat
the oven to 475 ° F. Line a large baking sheet with parchment paper, set aside.
Then, In a
saucepan, combine the ingredients of the firecracker sauce over medium-high
heat, bring to a boil, reduce the heat and let simmer. Simmer for 8-10 minutes.
Remove from heat and let the sauce cool. The sauce will thicken as it cools.
In large
bowl, combine ground chicken, garlic, salt, eggs, panko, cayenne pepper,
paprika and onion powder. mix all the ingredients together. DO NOT SURMIX, it
will give hard and dry meatballs.
Shape the
meat mixture into a ball, about 1 tablespoon meat by ball. (I used a cookie
dough) Place the meatballs into shape on a prepared baking sheet.
Bake for
11-13 minutes or until meatballs are cooked through.
Brush each
meatball with the sauce. Return to oven and cook for another 1-2 minutes.
Sprinkle or
baste with remaining sauce, if desired.
