Baked Broccoli Tots








Usually, I do not post on Sunday, but I had to share this recipe with you today. We made these tater toters healthy and refined broccoli yesterday and the whole family loved them.

INGREDIENTS
  • 1 large egg
  • 1/4 cup small diced onion
  • 1/4 cup finely ground breadcrumbs
  • 2 medium heads broccoli, cut into florets
  • 1/4 cup grated Parmesan cheese
  • Ranch dressing or ketchup, for dipping

INSTRUCTIONS

First, Preheat the oven to 350 ° F. Grease a nonstick baking sheet with cooking spray.

Then, Bring a large pot of salted water to a boil. Add the broccoli florets to the water and cook until tender, about 5 minutes. Drain the florets and transfer them to a food processor. Pulse the broccoli for a few seconds until it breaks down into small pieces. (Do not over-mix broccoli or the mixture will be too wet to form toddlers.)

Measure 3 cups of packaged broccoli and add to a large bowl. Add diced onion, bread crumbs, egg and parmesan and mix until well blended.
Using your hands, spread about 2 tablespoons of the mixture and shape it into tater tot form. Arrange them on the prepared baking sheet, spacing them approximately 1 inch apart.

Bake the toddlers for about 20 minutes, then turn them over once and cook for an additional 10 to 15 minutes until crisp. Take the toddlers out of the oven and serve them with ketchup, Ranch vinaigrette or hummus. Happy Cooking Time.
