Italian Sausage Tortellini Soup
Done this
for dinner last night ... it was simple and relatively fast.
Ingredients
- 4 cups chicken broth
- 2 tablespoons flour
- 3-4 cloves garlic minced
- 2 generous cups cheese tortellini
- 1/2 medium onion chopped
- 1 cup heavy/whipping cream
- 2 dashes Italian seasoning
- 1 (17.6 ounce) package Italian sausages crumbled into bite-size pieces
- 1 (28 fluid ounce) can diced tomatoes with juices
- Salt & pepper to taste
Instructions
First, Add
the sausage pieces to a large pot over medium-high heat. Sauté for 5 to 7
minutes, stirring occasionally, or until sausage is golden brown.
Then, Take
the sausage out of the pot and set it aside on a plate. Drain the fat from the
pot (leave one to cook the onion).
Cook the
onion for about 4 minutes, then add the flour to the pan and cook for one
minute, stirring constantly.
Add the
chicken broth slowly and stir until the flour is completely dissolved.
Add canned
tomatoes, garlic and Italian seasoning to the pan. Also add the sausage.
Increase the heat and bring the soup to a gentle boil.
Once
boiling, add the tortellini and reduce the heat so that they simmer gently.
Cook 5 minutes.
Stir in the
cream and cook another 5 minutes.
Season with
salt and pepper to taste and serve immediately.
Happy
Cooking Time.
