Tuna and Sweetcorn Mini Quiches
These mini quiches are great for packed lunches, picnics, little ones will love them, but they're also great for the whole family.
Ingredients
- ½ cup of milk
- 3 eggs
- ½ cup of frozen corn
- 2 new onions
- 2 sheets of puff pastry, thawed
- 95 g tin of drained tuna
- ½ cup frozen peas
- ¾ cup grated cheddar cheese
Instructions
First, preheat the oven to 220 degrees.
Then, in a bowl, combine the eggs, milk, cheese, frozen tuna peas, frozen corn and spring onions.
Cut circles of dough to fit your muffin tins (you don't need to roll up the sides).
Fill each dough shell with about 1 tbsp on the egg mixture.
Bake at 220 degrees for 20 minutes or until golden and set.
Let cool in the pan for 5 minutes, then transfer to a wire rack to cool.
