Pumpkin Coffee Cake
Pumpkin Coffee Cake - chewy and tender pumpkin cake bursting with spice and finished with a crispy buttercrumb topping but melt in your mouth.
INGREDIENTS
COFFEE CAKE
- ½ tsp. Milk
- 1 large egg
- 1 tbsp. pumpkin pie spice
- ¼ tsp. softened butter
- 2 ½ tsp. baking powder
- 2 tbsp. all purpose flour
- ¾ c. brown sugar, packed
- 1 C. pumpkin puree
STREUSEL TRIM
- ½ tsp. all purpose flour
- ½ teaspoon pumpkin pie spice
- ¾ c. brown sugar, packed
- 4 tablespoons softened butter
INSTRUCTIONS
First, preheat the oven to 350 °.
Then, in medium bowl, combine flour, baking powder and pumpkin pie spice. Put aside.
In another mixing bowl, cream the butter and brown sugar.
Stir in the pumpkin puree, milk and egg.
Add the dry ingredients and mix until well blended.
Place dough in greased 8 x 8-inch baking pan.
Prepare the streusel by mixing the ingredients with a fork or pastry blender until they look like coarse crumbs.
Sprinkle the streusel filling evenly over the dough
