Vegan Thai Peanut Curry

INGREDIENTS
Seasoned tofu and left to face
500g tofu harder or harder
2 tablespoons soy
½ teaspoon cinnamon
½ teaspoon turmeric
1 teaspoon cumin
1 teaspoon ground coriander
1 teaspoon sweet paprika
1 teaspoon sugar
Thai peanut curry
2 garlic cloves, finely chopped
1 small onion, finely chopped
2 chopped red chilies
1 inch of grated or finely chopped ginger
1 small carrot, finely chopped
500 ml of vegetable broth
80 g of peanuts or spread
1 teaspoon sugar
1 tablespoon soy
400 ml coconut milk
Chopped vegetables of your choice
INSTRUCTIONS
1.Soak the tofu. Cut the tofu blocks into cubes and prepare the seasonings. Combine soy , cinnamon, turmeric, cumin, coriander powder, and sugar during a small bowl. Add the spices to the tofu, mix them together with your hands or your spoon and let the spices steep while you prepare the opposite ingredients.
2.Heat a touch oil during a skillet and add garlic, shallots, red bell peppers, ginger and carrots. Saute for a couple of minutes until the onions are soft and every one ingredients are cooked and transfer to an outsized pitcher.
3.Add vegetable stock, mashed peanuts or spread , sugar, and soy . Mix all ingredients during a hand blender until you get a soft sauce.
4.Using an equivalent saucepan or pan you used before, add a touch oil if necessary, heat the oil and add tofu and chopped vegetables of your choice.
5.Cook for a couple of minutes until the vegetables start to brown. Pour the peanut sauce and coconut milk. bring back a boil and let it simmer for about quarter-hour . Adjust with the salt to taste and your curry are going to be able to taste.
