ASIAN SHRIMP ZUCCHINI NOODLES







Eat yourself lean with this delicious Asian Shrimp Zucchini Noodle Recipe. It's easy to prepare, low in carbs, gluten free, and high in vegetables.

INGREDIENTS:

  • 1 shallot, minced
  • 1 pound (3 medium zucchini), spiraled 
  • 1 pound of medium shrimp, peeled and deveined
  • 2 teaspoons of lemon zest
  • 4 garlic cloves, minced and divided
  • 2 tablespoons chopped fresh parsley leaves
  • 4 tbsp unsalted butter, divided
  • Kosher salt and freshly ground black pepper, to taste

DIRECTIONS:

First, melt 1 tablespoon of butter in a large skillet over medium heat. Add 2 cloves of garlic and cook, stirring frequently, until fragrant, about 1 minute.

Then, stir noodles into zucchini until just tender, about 2-3 minutes; Season with salt and pepper to taste. Reserve and keep warm.

Melt the remaining 3 tablespoons of butter in the pan. Add the remaining 2 garlic and shallot cloves and cook, stirring frequently, until fragrant, about 2 minutes.

Add the shrimp; Season with salt and pepper to taste. Cook, stirring occasionally, until pink and cooked through, about 3-4 minutes. Stir in the lemon zest and parsley.

Serve immediately with zucchini noodles.
