Sweet and Sour Salmon






Sweet and Sour Salmon: Easy and full of flavor with sweet pineapple and shiny peppers, these pouches are perfect to toss on the grill or bake for a delicious spring / summer meal!

INGREDIENTS

  • 3 cloves of garlic
  • 1 tablespoon of rice vinegar
  • 1/2 teaspoon of cornstarch
  • green onions for garnish if desired
  • 1 tablespoon of granulated sugar
  • 4 salmon fillets with the skin on
  • 2 tablespoons of low sodium soy sauce
  • 2 tablespoons of Thai chili sauce
  • sesame seeds for garnish if desired

INSTRUCTIONS

First, preheat the oven to toast it and position the oven rack on the upper rack. Line a baking sheet with foil and spray with nonstick cooking spray.

Then, place the salmon fillets skin side down on the prepared baking sheet, set aside.

In a small saucepan, combine the soy sauce, vinegar, sugar, Thai chili sauce, garlic and cornstarch. Bring to a boil and whisk constantly until the sauce thickens.

Brush half of the sauce over the salmon fillets. Place in the oven and broil for 8 to 10 minutes or until the salmon is cooked through, brushing on the remaining sauce halfway through cooking. If the salmon starts to get too brown, lower the grill.

When the salmon has cooled a bit, remove the skin and serve immediately with green onions and sesame seeds for garnish, if desired. Happy Cooking Time.
