Grilled Calamari
This grilled squid is grilled on a skewer, which i feel is as delicious as fried! Sometimes the only dishes are the simplest and this is often no exception. juice , fine vegetable oil and a pinch of salt and pepper - very tasty and straightforward fish dish!
INGREDIENT
1 pound squid, tube only
salt and pepper
extra virgin vegetable oil
1 lime, dig pieces
a few sprigs of fresh parsley, finely chopped
wet bamboo skewers
INSTRUCTIONS
1.Preheat the grill. Wash the squid, dry with paper towels. Cut the squid into 2-inch tubes and place them in bamboo skewers. Season each side with S&P.
2.Bake over medium-high 4 minutes per side or until edges are slightly charred.
3.Sprinkle vegetable oil over the ripe squid, squeeze the lime and garnish with parsley
NOTE
If possible, ask your fishmonger to wash the squid for you.
To tenderize the meat and take away a number of the chewing, soak the squid in juice or kiwi juice for half an hour before cooking. The acidity helps break down the feel . If not, soften by soaking the squid in milk overnight, cover and store within the refrigerator.
When cooking, place the squid body lengthwise onto the skewers in order that it's even.
Calamari may be a high-protein, low-fat food, so if you would like to remain healthy, serve it with a Greek salad.
