Lemon Pistachio Cake

INGREDIENTS
- 2 large eggs
- ½ cup of vegetable oil
- ¾ teaspoon of baking soda
- 1 tablespoon of lemon juice
- ¾ cup of sugar
- 1 tablespoon of lemon zest
- 1 teaspoon of vanilla extract
- 1 ¾ cup of flour
- ½ teaspoon kosher salt
- ¼ cup Greek yogurt
- 1 cup chopped pistachios, divided
For the icing:
- ⅛ teaspoon of kosher salt
- ½ teaspoon of vanilla extract
- 1 tbsp unsalted butter, melted
- 1 cup of powdered sugar
- 1 tablespoon of lemon juice
Instructions
First, preheat oven to 350 ° F. Coat 9x5-inch loaf pan with cooking spray and set aside.
Then, sift together the flour, baking soda and salt in a bowl and set aside. In a large mixing bowl, beat the eggs, sugar and vegetable oil until creamy. Add the Greek yogurt, lemon juice, lemon zest and vanilla.
Add the dry mix to wet and stir until just incorporated. Stir in ½ cup of chopped pistachios and pour the batter into the prepared bread pan and bake for 40 to 50 minutes.
Let cool in pan for 5 minutes before removing bread from pan to cool on wire rack.
Whisk together powdered sugar, lemon juice, salt, vanilla and melted butter to form the icing, adjust sugar or lemon juice to achieve desired thickness. Pour frosting over cooled bread, then sprinkle reserved chopped pistachios on top. Happy Cooking Time.
