HONEY CHIPOTLE CHICKEN
This honey chipotle chicken is SO good! I added a tomato, cucumber, and avocado salad on the side and it was the perfect quick and easy weekend dinner.
Ingredients:
- 2 pounds boneless, skinless chicken thighs
- Rub dry
- 1 teaspoon of chipotle powder
- 3/4 teaspoon garlic powder
- 1 teaspoon of dry ground mustard
- 1 teaspoon of smoked paprika
- 1 teaspoon of kosher salt
- 2 tablespoons of light brown sugar
Honey chipotle sauce
- 2 tablespoons of apple cider vinegar
- 3 garlic cloves, minced
- 2 tablespoons of olive oil
- 1/4 cup adobo sauce, from a can of chipotle adobo
- 1/4 cup honey
- 2 chipotle peppers from the same box of chipotle adobo, chopped
- optional - cilantro or parsley for garnish
Instructions
First, cut the excess fat from the chicken thighs and pat them dry.
Then, in a small bowl, mix all of the dry rub ingredients together. Coat the chicken with the dry mixture and set aside.
In a medium bowl, combine all the ingredients for the honey chipotle sauce. Put aside.
Heat olive oil in a large skillet over high heat. Place the chicken in the heated pan and cook, 4 to 5 minutes, until the chicken has a nice golden color on one side. Flip the chicken and lower the heat to medium and continue cooking for 7 to 8 minutes, or until the chicken is cooked through.
Lower the heat to low and pour the honey chipotle sauce over the chicken. Let the sauce cook for 2-3 minutes until it thickens slightly. Turn the chicken in the sauce so that both sides are coated.
Garnish with cilantro or parsley if desired. Serve immediately.
Notes:
You can use chicken breasts instead of the thighs if you prefer.
If you don't like Adobo sauce, you can add barbecue sauce in its place and omit the chipotle peppers.
