 Broccoli & sage pasta



This healthy vegetarian pasta dish just must be stirred and it's ready in seconds


INGREDIENTS

140g of fast cooked spaghetti

140g long-stemmed broccoli, dig 5cm long pieces

3 tablespoons of vegetable oil

2 shallots, sliced

1 clove , finely chopped

¼ teaspoon ground paprika

12 sage leaves, grated

grated parmesan (or vegetarian alternative), to serve (optional)


INSTRUCTIONS

STEP1

Boil the spaghetti. Add broccoli and cook for 4 minutes.

STEP 2

Meanwhile, heat the oil during a skillet then add the shallots and garlic. Simmer for five minutes until golden brown. Add the peppers and sage to the pan and simmer for two minutes. Drain the pasta, stir with the shallot mixture during a saucepan, then sprinkle with parmesan, if desired.
