Salmon with Mango Salsa
Here you have one of the quintessential summer meals! The tender flaky salmon is topped with a bright and creamy mango avocado salsa and served with bed rice or coconut. Sure to impress anyone who gets the chance to try it!
INGREDIENTS
- salt and pepper
- 2 tablespoons of honey
- 2 teaspoons of olive oil
- 4 6-ounce salmon fillets
- 2 tablespoons of butter
Mango sauce
- 1/2 red onion, diced
- juice of 1 lime
- 1 red pepper, diced
- 2 large mangoes, diced
- handful of finely chopped cilantro
- 1/4 teaspoon salt or to taste
INSTRUCTIONS
Prepare the salsa
First, combine the mangoes, peppers, onions and cilantro.
Then, add lime juice and salt and stir well. Taste, add salt to taste. Put aside.
Prepare the salmon
Rub the salmon all over with olive oil. Season generously with salt and pepper.
Melt the butter in a large skillet over medium heat.
Once the butter has melted, add the honey.
Arrange the salmon fillets in the pan in a single layer and without touching them if you can help it. Cook for 4 to 5 minutes.
Gently flip the salmon and cook an additional 5 to 8 minutes until completely opaque and the salmon is caramelized on the outside.
Garnish the salmon with the mango salsa and serve. Enjoy!
NOTES
Spice it up: add 1-2 diced jalapenos (stems and seeds removed) to the salsa for an extra kick!
