Braised Chicken in Oyster Sauce


 Braised Chicken in Oyster Sauce



An easy, savory and savory Chinese dish of stewed chicken in oyster sauce, made with chicken wings and thighs, and cooked until juicy and tender when simmering. (Adapted from 'The better of Chinese Food' by Betty Yew)


INGREDIENTS

3 chicken thighs

1/2 tablespoon soy

1/2 teaspoon pepper

Ginger buds 1 inch long

3 cloves of garlic

3 spring onions

3 dried clams

2 tablespoons vegetable oil

1/2 tablespoon Chinese wine

For the sauce:

1 1/2 cups water

1 teaspoon of chicken seasoning powder

1/2 tablespoon oyster sauce

2 teaspoons soy

1/2 teaspoon thick soy

2 teaspoons of sugar

pinch of salt

Thickened:

1 to 2 teaspoons of cornstarch mixed with 1 tablespoon of water


INSTRUCTIONS

1.Cut each chicken thigh into 3 or 4 pieces. Season with soy and pepper. half-hour backup.

2.Meanwhile, peel and slice the ginger and garlic. Cut the white chives into 1 inch pieces. Cut finely the green part for adornment . Soak the dried clams in warm water until soft, about 10 minutes. Drain, but leave the soaking water. Grate the clams until smooth.

3.Mix the ingredients to form a sauce.

4.Heat a skillet over high heat with the vegetable oil until thoroughly heated. Saute the new ginger, garlic and onion (white part) until fragrant. Add the grated clams and sauté for 1 to 2 minutes. Add the chicken pieces and stir until they modify color. Sprinkle with Chinese wine and saute vigorously until well blended.

5.Transfer to a clay or clay pot (optional). Pour within the sauce mixture and therefore the remaining marinade. Bring it to a boil. Once it boils, cover the pan or skillet with a lid, reduce the warmth to low and let it simmer until the chicken is tender, about half-hour approximately , counting on the specified tenderness.

6.When almost done, taste the sauce. If you would like a more intense flavor, leave the pan uncovered and let the sauce drain. because the water evaporates, the saltiness or sweetness of the sauce also increases, so adjust it to your taste by adding more salt or more sugar. Thicken the sauce with the cornstarch mixture to the specified consistency.

7.Garnish with many chopped chives and serve immediately
