Turkey Salad







This delicious and fresh turkey salad with cranberry vinaigrette is the perfect healthy recipe for what to do with your Thanksgiving leftovers!

INGREDIENTS

Pad:

  • 1 tablespoon of fresh lemon juice
  • 1/2 teaspoon minced fresh garlic
  • 1/4 teaspoon black pepper
  • 1/4 cup avocado oil mayonnaise
  • 2 teaspoons of Dijon mustard
  • 1/2 teaspoon Diamond Crystal Kosher Salt

Salad:

  • 1/2 cup diced celery
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped red onion
  • 2 cups cooked turkey meat, diced (10 oz)
  • 2 tablespoons of chopped cilantro

INSTRUCTIONS

First, in a small bowl, whisk together the dressing ingredients.

Then, in a large bowl, combine the turkey, celery, red onion, cilantro and feta.

Incorporate the vinaigrette.

Serve immediately or cover and refrigerate for an hour to allow flavors to blend. Mix again before serving. Happy Cooking Time.
