 Spicy Eggplant Pasta 



Spicy Eggplant Pasta may be a delicious meatless pasta that's filling enough for an honest night's sleep on a cool autumn night. this is often basically Pasta alla Norma, a standard Sicilian pasta dish.


INGREDIENTS

2 whole eggplants, chopped

1 tablespoon kosher salt

1 pound fine spaghetti, cook hard

2 tablespoons of additional virgin vegetable oil

2 tablespoons unsalted butter

1 whole onion, diced

2 whole carrots, diced

2 garlic cloves, chopped

2 teaspoons red chili flakes

2 tablespoons of ingredient

1 cup dry wine

1 {16 ounces} of spaghetti sauce

Kosher salt and ground black pepper, as seasonings

Fresh parsley and fresh basil, chopped for garnish

Parmesan cheese, grated for garnish


INSTRUCTIONS

1.Place the chopped eggplant into a colander. Mix with 1 tablespoon of kosher salt and let it sit for 20 minutes to let the eggplant sweat. Rinse thoroughly and pat dry with a clean towel before cooking.

2.Bring an outsized pot of water to a boil. Season the water with kosher salt and boil the pasta until hard , about 8 minutes. Drain well.

3.In a large, short skillet, heat the vegetable oil and butter over medium-high heat. Add chopped eggplant, onions and carrots, season with kosher salt. Cook for five minutes until the vegetables are tender and lightweight .

4. Add the garlic, red chili flakes and ingredient to the pan, stir and cook until fragrant, about 30 seconds. Reduce the warmth to medium and pour the wine. Stir until the tomato and grape paste is combined and thick. Add the spaghetti sauce and stir to mix . Season with halal salt to taste and simmer for five minutes.

5.Add pasta to sauce and serve. Garnish with chopped parsley, basil and grated Parmesan. Enjoy!
