Spinach Avocado Breakfast
INGREDIENTS
4 large eggs
4 egg whites
6 tablespoons of water
1/2 teaspoon ground pepper
1/4 teaspoon salt or to taste
4 medium-sized low-carb whole grain tortillas
1/2 cup grated sharp cheddar
spicy sauce to taste
3/4 California avocado slices
2/3 cup spinach leaves
optional chopped parsley
INSTRUCTIONS
1.In a medium bowl, beat the eggs, egg whites and water.
2.Place an outsized skillet over medium heat. Use cooking spray. Pour the egg mixture into the pan. Cook, scrapping the skillet occasionally, until the eggs are scrambled and hardened. Season with salt and pepper.
3.Heat a medium skillet over medium-high heat. Place 1 tortilla within the pan and half the tortilla top with ¼ each of cheese, dish , sauce (some great shakes), California avocado, and spinach.
4.Fold the opposite side of the tortilla during a semicircle. Press with a spatula because the cheese melts to hide the quesadilla. When rock bottom is golden, turn the quesadilla and brown on the opposite side.
5.Remove the quesadilla from the pan, dig thirds and garnish with parsley, if desired. Serve.
6.Repeat with remaining tortilla, cheese, dish , hot sauce, avocado and spinach.
