Slow Cooker Apricot Chicken
This slow cooker apricot chicken recipe features tender chicken thighs with a sweet and savory savory broth. Very easy dinner choice!
INGREDIENTS
6 chicken thighs with skin on the bones also can use boneless and skinless chicken thighs
salt and pepper to taste
2 teaspoons of vegetable oil
1 chopped onion
1 cup apricot jam
2 tablespoons soy
1 tablespoon Dijon mustard
1 teaspoon chopped fresh ginger
2 tablespoons chopped parsley
INSTRUCTIONS
In a small bowl, beat the apricot jam, soy sauce, Dijon mustard, and ginger. Set aside.
Heat vegetable oil during a large skillet over high heat. Season the chicken thighs on each side with S&P.
Place the skin side of the chicken thighs under the skillet and cook, 4 to five minutes per side, until they're golden brown. Add the onions to the skillet and cook 5 minutes or until soft.
Place the chicken thighs and onions within the slow cooker. Pour the sauce over the chicken and onions.
Cook on Low for six to eight hours or HIGH for 3 to 4 hours. Sprinkle with parsley and serve.
