Self Saucing Butterscotch Pudding






A batter magically transforms into a hot butterscotch pudding with LOTS of butterscotch sauce bubbling underneath!

Ingredients

BASED

  • 1 egg
  • 1/4 cup brown sugar
  • 1/2 cup of milk
  • 100g of melted butter
  • 1 1/4 cups self-rising flour
  • 2 tablespoons of golden syrup

SAUCE

  • 2 cups of boiling water
  • 1 1/2 tablespoon cornflour
  • 3/4 cup brown sugar
  • 3 tablespoons of golden syrup

Instructions

First, preheat the oven to 180 C

Then, prepare a large casserole dish (with lid) with cooking spray or butter lightly covering the inner surface

In a medium bowl, add the flour and the first scoop of brown sugar and mix well.

In a separate small bowl, add the melted butter, egg, milk and the first scoop of golden syrup and whisk until well combined.

Pour these liquids into the flour mixture and mix well

Pour it into the base of the prepared pan and set aside.

SAUCE

Combine the second scoop of brown sugar and cornstarch in a small dish and sprinkle it on top of the base.

In a medium jug, combine the boiling water and the golden syrup and whisk well

Pour it all over the pudding, cover with a lid or foil, and bake for 40-45 minutes until the base cake is done - you can check with a fork!

Let stand 20 minutes before serving to allow the sauce to thicken slightly.

Serve with ice cream, cream or custard. Happy Cooking Time.
