AVOCADO EGG SALAD
Spice up the usual egg salad with the addition of avocado. Avocado makes a delicious and nutritious addition to egg salad and thanks to its naturally creamy texture, you can enjoy egg salad without the addition of mayonnaise!
INGREDIENTS
- 1 tablespoon chopped dill
- 2 tablespoons of light mayonnaise
- salt and black pepper, to taste
- 3 hard-boiled eggs, peeled and chopped
- 1 medium avocado, pitted and peeled
- 1 teaspoon of fresh lemon juice
- 1 tablespoon minced chives
INSTRUCTIONS
First, add avocados to a medium bowl and mash them with a spoon or fork until lightly cut into pieces.
Then, add all the remaining ingredients and mix. Taste and season with more salt and black pepper as needed.
Serve on toast or accompany with pita chips.
