Blueberry Fudge






Blueberry Fudge







This incredible blueberry fudge is a creamy white chocolate fudge swirled with sweet blueberry sauce all over. It's done in the microwave.

Ingredients
  • 1 cup  freeze dried blueberries 
  • 1/2 teaspoon  purple gel food coloring  (optional)
  • 1 cup  sweetened condensed milk 
  • 20 ounces  white chocolate melting wafers 

Optional Garnish:
  • 1/4 cup  freeze dried blueberries 
  • 6 ounces  white chocolate melting wafers 

Instructions

First, line a 9 x 9-inch pan with parchment paper, so that it overhangs on both sides. Put aside.

Then, add 1 cup freeze-dried blueberries to a food processor. Pulse a few times to lightly chop the fruit. Put aside.

Combine chocolate wafers and condensed milk in a large microwave safe bowl.

Microwave in 20 second increments and stir very well after each until the chocolate has melted. It only took me two intervals to melt the chocolate, make sure to stir well before microwave again, as the remaining heat will melt the chocolate.

Note: If you are using regular chocolate, be sure to cut it into small pieces before adding it to the bowl in the microwave.

Mix well until smooth, add the chopped freeze-dried blueberries. Mix well. 
For a more pronounced purple color, add the gel food coloring.

Pour the mixture into the prepared pan. If desired, sprinkle with freeze-dried dried blueberries and pour melted white chocolate on top. Refrigerate 1 hour.

Slice the fudge and serve.

The fudge can be stored at room temperature for 1 week in an airtight container longer in the refrigerator.
